<p>The best cocktail ever!</p>
<p class="" style="white-space: pre-wrap;">So, I’m always making this cocktail for at least four people at a time. Given that, the “shot” glass I use is about 80mls. You can make this for one person with a regular shot glass, just halve or quarter the amount of lime and ice. The rest will scale just fine. Just be mindful that my reference to a “shot” below is my big 80ml shot glass to make about four drinks.</p>
<p><em>1 lime</em><br />
<em>1.5 shots tequila</em><br />
<em>1/2 shot cointreau</em><br />
<em>2 shots coconut cream</em><br />
<em>3/4 shot sugar syrup</em><br />
<em>1 tray of ice</em></p>
<p class="" style="white-space: pre-wrap;">Sugar/salt rim</p>

<p class="" style="white-space: pre-wrap;">Cut the lime in to quarters and put the lime, tequila and Cointreau in a blender and blend on high until the lime is liquid. And yes, the whole lime including the skin. It’s great 🙂</p>

<p class="" style="white-space: pre-wrap;">Add coconut cream, sugar syrup and ice to the blender and blend until slushy consistency.</p>

<p class="" style="white-space: pre-wrap;">Dip the top of your glasses in the remaining sugar syrup and then dip in the sugar/salt mix so the whole rim is coated. Repeat with remaining glass(es).</p>
</li>

<p class="" style="white-space: pre-wrap;">Pour cocktail in to rimmed glasses and enjoy getting drunk in a flavour haze.</p>

<p class="" style="white-space: pre-wrap;">Notes:<br />
Sugar syrup is just 1/2 sugar: 1/2 boiling water. Depending on how many cocktail rounds I’m planning on making, I’ll usually do half a cup to one cup of sugar and boiling water. Stir the equal portions together in a heatproof bowl and chill until ready.</p>
<p><span style="color: var(--nv-text-color); font-family: var(--bodyFontFamily); font-size: var(--bodyFontSize); font-weight: var(--bodyFontWeight); letter-spacing: var(--bodyLetterSpacing); text-transform: var(--bodyTextTransform); background-color: var(--nv-site-bg);">To make the rim, combine equal parts sea salt and white sugar in a container that will fit the rim of whatever glass you’re using.</span></p>

<p class="" style="white-space: pre-wrap;">Whisk with a mixer, hand whisk or balloon whisk &#8211; whatever you have &#8211; until it’s light and creamy.</p>

<p class="" style="white-space: pre-wrap;">Pour milk of your choice in to a glass, add ice and top with a couple of generous spoonfuls of the coffee cream.</p>
