1/3 cup brown sugar
1/4 cup soy sauce
1/8 cup mirin
1/8 cup rice wine vinegar
1 teaspoon grated ginger

  1. Put all the ingredients in a small pot.

  2. Heat, while stirring, over medium heat until the sauce slightly reduces and thickens.

  3. serve warm or cold with okinomiyaki, korokke, dumplings etc
